Inspired by the different types of fermentation used in a brewery, Mauricio developed this process to boost the tropical profile of the coffee. The coffee is picked ripe and de-pulped the same day, then fermented in tanks for between 12–36 hours. Filter Roast 250gThis AB has superb clarity, with bright notes of red currant and plum in the cup. The sweetness is gently syrupy, like raisin or candied orange.
